Recipe- Spanish Chicken & Rice (Slimming World Friendly)



This Spanish Chicken & Rice is a pretty quick dish to put together, the chicken is so tender & has a flavorsome seasoning & the rice is just amazing pack with lots of veggies & never from a packet.

Once you try this rice, you will wonder why you ever used packet rices, this is just lovely & fresh & super easy to make & it really doesn’t take much longer to make, all you have to do is chop the veggies fry them in some spray oil before adding your rice & stock.

I love the rice on it’s own, so adding the chicken is a flavour explosion!

With just 10 minutes prep time & 20 minutes cooking time, you can't really go wrong, can you? Definitely a dish that you have to try!

Ingredients- Serves 4

For The Chicken

  • 4x Chicken Breast, skin & fat removed
  • 4x Tsps Paprika
  • Sea Salt & Ground Black Pepper, to taste
  • Fry-Light
For The Rice
  • 1x Medium Onion, chopped finely
  • 2x Garlic Cloves, crushed
  • 1/2x Green Pepper, de-seeded & chopped
  • 1/2x Red Pepper, de-seeded & chopped
  • 1x Zucchini, finely grated- excess moisture squeezed out. 
  • 1/2x Cup Frozen Peas
  • 1x Cup Rice
  • 2x Tsps Chilli Powder
  • 2x Tbsps Tomato Purée 
  • 2x Cups Chicken Stock
Method

  1. Spray a large saucepan with spray oil & fry the onion, garlic for a few mins to soften. Add the zucchini & peppers & fry for a further 2 mins. Add the rice & chilli powder stir to mix thoroughly.
  2. Add the tomato paste & chicken broth & bring to the boil, cover & reduce to a simmer until all liquid is almost absorbed (refrain from stirring rice in this cooking period), Add the peas just before the end of cooking time. Remove from heat & set aside still covered with lid so that the steam continues to cook the rice.
  3. In a bowl mix together the paprika with some black pepper & salt & rub the seasoning into the chicken breasts, spray a large grill pan or skillet with some fry-light & brown on both sides until chicken is cooked through & slightly charred.
  4. Slice chicken breasts & serve with the rice.
