Recipe- Spicy Sweet Chilli Chicken Noodles




As much as I love cooking, occasionally even I am rushed for time & need a meal that I can put together really quickly & get on the table for supper.

Stir fries are great dishes for those moments, as it literally is just a case of stir frying some vegetables, adding a protein & then some rice or noodles & a stir fry sauce of choice. Nothing complicated.

One of my favourite quick marinades for a stir fry is using sweet chilli sauce. I love that sweet & spicy kick it gives & even my kids will tolerate the slight spiciness, meaning it is great for the whole family too. I mix it with a few other ingredients such as ginger, garlic, soy sauce & tomato paste just to up the flavour & it is perfect!!.

I even save time on the vegetables, by using handy bagged slaw mixes. I buy one or two bags of these a week as they are perfect for throwing into stir fries on days when we have a busy schedule. No time has to be spent chopping veg. Also as the veg is shredded almost like noodles, the kids don’t even realize there is all that veg in there when you add some noodles. So they are a great choice for fussy eaters.

This dish is super quick & easy to make with just 10 minutes prep time & around 20 minutes cooking time.


Ingredients- Serves 4

  • 3x Large Chicken Breasts, diced/sliced
  • 400g of Egg Noodles
  • 400g of shredded vegetables of choice 
  • 6x Tbsp of Soy Sauce
  • 3x Tbsp of Sweet Chilli Sauce
  • 2x Tbsp of Tomato Paste
  • 2x Tbsp of Rice Vinegar
  • 2x Tsp of Grated Fresh Ginger
  • 4x Cloves of Garlic, crushed
  • 6x Spring Onions, chopped
  • 1x Red Chilli, de-seeded & diced
  • Frylight 
Method

  1. Spray a wok with a few sprays of Frylight & fry the chicken pieces over a medium-high heat until cooked through & browned off.
  2.  Add the soy sauce, chilli sauce, tomato paste, vinegar, ginger & garlic to a bowl & whisk to combine. 
  3. Cook noodles according to packet instructions & set aside.
  4. Add shredded vegetables & diced chilli to the wok & stir fry for approx 3-4 mins.
  5. Add in the sauce & simmer until thickened.
  6. Add the noodles to the pan & toss till all heated through. 
  7. Sprinkle with the chopped spring onions 
  8. Serve & enjoy.
